Our products are annually 3rd party tested, 100 % free from all impurities, pesticides, herbicides, and GMO. Hikiän honeycombs are harvested once a year from the beehives by hand. Before bottling there is only one process the honey goes through. It is allowed to rest, nothing else. This non - processing preserves all the important vitamins, minerals, amino acids, and enzymes in honey. We are using the traditional and sustainable beekeeping methods, for example the beehives are made from wood which provides the bees as natural living habitat as possible. We don’t add anything to the honey. It is 100 % pure Finnish honey. The honey season at Hikiän lasts annually only 8 weeks. It is one of the shortest seasons in the world. The length is due to the four distinct seasons we have in Finland. Exceptionally low HMF level Hikiän Biodynamic Honey has an exceptionally low HMF level, only 3,3 mg/kg. Hydroxymethylfurfural (HMF) levels can vary from 0 mg/kg up to anything. According to Finland’s Beekeeping Association 15 mg/kg is considered as good quality, and the maximum allowable level in Finland is 40 mg/kg. Lower the HMF level is, more enzyme activity, and healing power can be expected. This also means that there is less processing such as refining, filtering, heating, and treating. HMF is a break - down product of fructose. It forms slowly during storage and very quickly when honey is heated. Fresh natural honey can have varying levels of HMF. In the hive honey would normally be below 1 mg/kg but levels soon start to rise with temperatures above 20°C. It is usual for HMF to be below 10 mg/kg in fresh extracted honey. Levels higher than this may indicate excessive heating during the extraction process or packaging process. Typical structure for Hikiän Biodynamic Honey is a relatively hard structure. Honey may also have a layer of white frost which is very normal, and edible. The frost is an outcome from the crystallization that happens to non - processed honey. No restriction on plant base We don’t restrict our bees to monofloral areas. We rely on our bees’ intelligence to know what type of nectar, pollen, propolis etc. is needed to survive during the long and cold winter. The main plant base for Hikiän bees is bilberry, lingonberry, heather, and willow herb. Sunlight enables all plants to grow, and if they continue to be exposed to the sun after reaching maturity, the effect of the light changes, and accelerates the molecular decaying process.
