Sauternes is arguably the most famous region in the world for dessert wines. Wine is made from Semillon, Sauvignon Blanc, and Muscadelle grapes that have been affected by Botrytis cinerea, also known as ‘noble rot’. This causes the grapes to become partially raisined and covered with a special mould, resulting in concentrated and distinctively flavoured wines. Only the affected grapes are used, so every harvest it is necessary to make several passages in the vineyard to select only the noble rotted bunches. The wines are then fermented in oak and aged for 12 - 24 months. Château d’Yquem is the most famous wine from this region.
