The blending formula in the Castello della Sala 2021 Conte della Vipera has been tweaked just a bit to increase the presence of Sémillon, which now accounts for 30% of the blend. The rest is Sauvignon Blanc. This refreshing white was first produced in 1997, and back then the blend saw Sauvignon Blanc paired with Chardonnay. This is a zesty and expressive white with delightful aromas of tropical fruit and tomato leaf, all backed by a pinch of freshly milled white pepper. The added Sémillon builds up the soft fruitiness of the wine in what is an ample 107,000-bottle production from the Antinori family's estate in Umbria.
