William Fevre has grown into one of the biggest landowners in Chablis, with 51 hectares of prestigious vineyards. They have set the benchmark for Chablis, the appellation known for its fresh, elegant and mineral white wines made from 100% Chardonnay grapes. Many of Fevre’s wines are not kept in oak, but for the Premiers Crus and the Grands Crus they put a proportion of the wines in old wood barrels to add extra complexity and texture. Since being purchased by the Henriot Champagne, William Fevre has seen considerable investment which is reflected in the increased quality of the range.
