No fewer than ten generations have succeeded one another at Cazé Thibault. Today, Fabien is carrying on the family's ancestral know - how, and is one of a new generation determined to make champagnes that reflect their terroir. The plots are located right in the heart of the Marne Valley, offering cuvées with character. The vines are grown without the use of herbicides or insecticides, before being harvested by hand. The wine is neither fined nor filtered before bottling. The dosage is limited to 2.7 grams of sugar per litre, so as not to alter the character of the wine. The resulting nectar is a pale - coloured champagne with a discreet nose combining notes of citrus fruit, fresh almonds and a hint of brioche. The palate is supple, light and delicious. A lovely champagne.
