The real is a cut of the front part of the bovine, and corresponds to a part of the animal's neck. The Reale is also known in Piedmont as a softie. The whole piece in the scottona starts from a weight of 3Kg and can reach a greater size such that it can be divided into three sub - cuts. One part, the one closest to the loin, is suitable for being cut into slices and is very similar to the rib. Then this part can be used as a grilled steak.
