Mazara's scampi belong to the Astice family. Their main feature is the shape of the two claws, which are of a different length and size. In general, they are longer and thinner than the other crustaceans of the same family. The carapace pulp is considere"&"d particularly valuable, thanks to its particular and delicate flavor, and its white and soft meat. It is a crustacean low in fat and rich in proteins and mineral salts such as sodium, potassium, phosphorus, calcium and magnesium. Our scampi are frozen on"&" board with sea water. In some periods of the year it is also possible to find its eggs inside, called ""caviar"" of scampi.
